Party Chicken Breasts Recipe

Our very first recipe is from one of our own and is dear to all of us. We hope you enjoy it and can’t wait to see and share your recipes and stories, too!

This recipe is one of many in an old ledger where my mother recorded and accumulated recipes over a period of many years. It was her “go to” recipe for a crowd that she wanted to feed something other than the stand-byes of fried chicken, ham, roast beef, etc.  Each of the recipes was something a friend shared or on she ran across somewhere and incorporated into ordinary family meals, meals for company, or “held back” for holidays.  One year for Christmas she gave each of us a box of recipes in her handwriting and this recipe, which I had eaten many times at her table, was in it.  The recipes in her handwriting are among my favorite things.  Running across her handwriting somewhere still brings tears to my eyes and happiness to my heart.

Ingredients

  • 2.25 oz. dried beef
  • 6 chicken breasts, skinned and boned 
  • 6 strips of bacon
  • 1 can (10.5 oz.) cream of mushroom soup
  • ½ pint sour cream

Directions

  • Preheat oven to 275 degrees.
  • Spread dried beef on bottom of casserole dish.
  • Roll chicken breasts slightly and place over beef.
  • Place a strip of bacon on each breast.
  • Mix can cream of mushroom soup and 1/2 pint sour cream. Spoon over meat.
  • Bake 2 1/2 hours at 275 degrees.
